브로멜라인 ( Bromelain) 은 1982년 파인애플 주스에 단백질 분해 소화 효소 로서
처음 발견되었다.


보통 파인애플 줄기에서 많이 발견되는데, 고기에 연육작용 을 하며,
고기와 함께 섭취할 경우 단백질의 소화를 돕는 작용을 한다.


특히 미량의 브로멜린 0.005%를 고기 표면에 뿌려도 연육 효과가 크게 나타나는 것으로
알려져 있다.
다만, 파인애플 에 있는 브로멜린 의 대부분은 통조림 으로 만드는 과정에서
열에의해 파괴될 수 있으므로 싱싱한 과일 이나 추출된 캡슐 로 섭취 한다


브로멜린 (bromelin) 또는 브로멜레인 이라고도 한다.
